Jedi Knight Riis' 5th birthday!

Riis turned 5 yesterday and we had a small Jedi party for him. I told him to make a list of some school friends that he'd like to invite. He listed 5 kids from school, his good friends Blake and Paige, Ryan and 2 dogs! He insisted that the dogs come. :) He had such a great time - we played some games, musical chairs, a meteor hunt (like an Easter Egg hunt, but with balls of foil with snakes inside) and we did a water balloon toss which seemed to be the favored game. Everyone loved that! Thanks to Dag for decorating and thanks to all of Riis' friends who make yesterday such a fun and memorable birthday!

Riis' 5th Birthday party at his børnehaven

Riis turned 5 on Sunday, November 15 so we had a little celebration for him at his børnehaven (kindergarten) on Friday afternoon. Needless to say, the kids were very excited for cupcakes and were quite willing to celebrate in exchange. :) Thanks to my friend Kristen for her delicious chocolate zucchini cupcake recipe.

Happy 5th Birthday Riis!

Riis is turning 5 on Sunday, November 15th and I quickly put together a little video for him to celebrate how loved he is by his friends and family.

5 years ago, my life was changed forever when I had Riis. I was in love from the second I found out I was pregnant and even more so when I finally met him months later. He's been a constant source of laughter, love, challenges, joy and inspiration to me and Dag and we are so proud that he is our son. The word love doesn't even begin to describe what we feel for Riis, who is so filled with energy and goodness. He is truly one of a kind and for that Dag, Beck and I are eternally grateful that he is in our lives.

Strange things in Denmark...on my birthday

I had to copy and paste this from my friend Tara's blog because it was too funny not to share.

Just a little back story - Tara just had an accident and her front teeth won't be functioning properly for another week or two. Okay, we went out for my birthday and here's what happened in Tara's words.:

My hilarious story of the weekend... so funny. We went to Mackies for dinner Sunday night. Mackies is an American style restaurant in Aarhus right near the big church. It's decorated like a wanna-be Applebees with stuff all over the place and they serve pizza like a wanna-be California Pizza Kitchen. Anyways, they have a "rule" that you can't eat your pizzas or hamburgers with a fork an knife likeDanish people do. American restaurant, American customs... "Oh, isn't that funny we ate our overpriced pizza with our hands. ha ha ha ha", says the Danish person.

This is the story:

Four of us ordered pizza, including me, and one of us ordered salad. My lack of functioning front teeth means I cannot bite a pizza, I knew I would have to cut it into a piece to get it into my mouth. We had mentioned this to the waitress when we ordered and she said, "No, cutting the pizza is not allowed." We explained my teeth situation... "big scary pogo-stick, concrete floor, ghetto wire holding teeth in place". The waitress was pretty adamant, "No, cutting the pizza is not allowed." We didn't think much of it, she left, we waited for our food.

The food arrived and my salad friend was the only one with a fork and knife. So, like a good mommy, she started to cut my pizza for me so I could eat. WHOA! Waitress is now freaking out.. "NO CUTTING PIZZA!!" "I told you you can't cut the pizza!!!" "STOP CUTTING THE PIZZA!"Short of jumping up and down she was having a full on temper-tantrum ...Salad friend keeps cutting the pizza. Angry waitress is now near tears,"That fork and knife is not for the pizza!" "You have to stop right now!!" ...Salad friend is now cutting faster while explaining it's our pizza... We inform the waitress again that I am physically incapable of biting the pizza. I tell her I will eat it with my hands but I have to get it into small pieces first. Salad friend is still cutting...

The friendly atmosphere quickly disappears... :) The waitress now officially hates us and every other American in the world. We are telling her it's our pizza, it's no big deal, that I have broken teeth... She is saying I should have ordered something that came with a fork then. This is seriously the most hilarious thing EVER. I'm laughing so hard and I can't believe that our waitress is SO UPSET! We told her to send the manager out thinking he would be a reasonable person. Nope, he's crazy too. ...but by now Salad Friend is finished cutting my pizza and I am showing him my willingness to eat it with my fingers.. He rambles on for a good minute in Danish. (A full minute of angry Danish is a lot..) He stops and then we tell him we don't speak Danish. He mutters some English and eventually leaves us and we finish eating. :) ...and we got a different waitress.

TOO FUNNY. I still can't believe this happened. We are plannning another dinner to Mackies with every American we can find, we will bring our own forks and on the count of three we will cut our pizza into tiny pieces. We will put a piece of pizza on the fork, hold it high in the air and yell SKÅL. ...then we'll probably turn and run from the restaurant before that crazy manager comes out.

Lindsey's Trip to Windsor Castle - November 4, 2009

On Wednesday, I got to visit Windsor Castle, which is stunning. There is so much history there to explore, it made for a beautiful visit. I got to do a day of guided tours and audio tours - what a luxury! :)

Lindsey's Trip to London - November 3, 2009

I flew to London by myself on Monday, November 2 to visit my friend Kelly. She took me into the city on Tuesday for the day and we had such a good time. We started our day at Buckingham Palace for the Changing of the Guard. We then went on to the Silver Cross, a quaint little pub, for some lunch and a pint. After lunch, we headed over to Westminster Abbey, which is so beautiful and I learned about over a thousand years of history through the Abbey's audio guide. We ended the day on the London Eye - so cool! See the photos below.

I caught Riis and Beck dancing in the living room last night while I was making dinner. When I tried to dance with them, Beck said "Don't dance!", as always! Love Beck's air guitar and the Riis' attempts to breakdance! Beck is really feeling the music.

And, yes, they LOVE Pink! :)

Riis' name

Riis came downstairs just now with his arms folded over his chest and unfolded his arms saying "Ta-Daaa!" See the pics below. He was upstairs writing letters on his white board. I don't know how he managed to write his name on his CHEST! Pretty impressive. :)
